Matchsticks BBQ Co. Restaurant, Williamsburg, VA

We finally made it over to Matchsticks BBQ Co. in Williamsburg, VA. They officially opened their restaurant on Jan. 6 earlier this year. You may recall that I have featured them when they were operating their food truck. We’ve kept up with Matt since then and have been anticipating the opening of the restaurant. So after several weather delays and various other issues we have made it over to Williamsburg to check them out as they head into their 3rd month. Here we go.

The Restaurant and Staff at Matchsticks BBQ Co.:

The restaurant is located in Midtown Row on Richmond Rd. in Williamsburg, VA. It’s a good location near the busy shopping areas and not far from the Colonial Williamsburg area. We were welcomed as soon as we walked in the door. Matt was busy in the kitchen so we didn’t bother him until we were finished eating. The rest of the staff didn’t know us so we were able to focus on our visit just like any other new restaurant we find. Everyone, as it turns out, was friendly and very helpful. Matchsticks BBQ Co. is set up with both inside and outside dining. Matt and his team has done a great job setting this place up and getting the restaurant up and running.

We placed our orders at the counter then chose our table.

Sliced Brisket with Mac & Cheese. Pickles and Onions included.

Tammy ordered Sliced Brisket with a side of Mac and Cheese. So if you love cheese, you’ll really need to try the Mac & Cheese. It is super cheesy and wonderful. Also, you can see in the picture the onions and pickles. That’s just a little extra that comes with your meal at Matchsticks BBQ Co. We love them with our meals.

 

And the Brisket. Look at the smoke ring on that slice of brisket. Check out the seasoning all around the outside of it. Just looking at it and remembering it makes me want to hope on the Ferry and head back to Williamsburg for more. Most of my regular readers know that Tammy is more the brisket person than I am but I absolutely love this brisket. The flavor is awesome. Even on the inside portion of the meat you can taste the flavors coming through. Matt and his team do such an outstanding job with their brisket I just love it. And that brisket compliment is reserved for only a few restaurants with me.

Sliced Brisket, Pulled Pork and Hot Sausage with Baked Beans and Potato Salad.

Today I went with a Three Meat Combo with Sliced Brisket, Pulled Pork and Hot Sausage. Of course I had to go with two sides, the Baked Beans and Potato Salad. I really enjoyed the baked beans. I will tell you that they have a bit of a black pepper kick to them. If you don’t like pepper you should try a different side. I get them every time I can. Then there’s the potato salad. Matchsticks BBQ Co. does a wonderful job with their potato salad. It’s just a great side to compliment the meats. I will also say that Tammy tried it and loves it as well. And she doesn’t normally like potato salad.

I’m only going to mention looking at the smoke ring and seasoning on the brisket again just in case you forgot. The hot sausage is very good. Later, Matt told me that he was working to get some different varieties to offer. Even a turkey sausage for those that may not like beef or pork. Well I’ll stick with this one but to each their own. Lastly just take a look at the pulled pork. Again you can see the smoke ring and we had some bark mixed in as well. Matt does not overpower his pork with seasonings. Its simple smoke and pork with a minimum amount of seasoning. The pulled pork at Matchsticks BBQ Co. is just delicious as well as moist and tender. Great job everyone. Loved it.

I am so thrilled that Matt was able to open this restaurant. We’ve enjoyed visiting the food truck on occasion but it’s hard to keep up with where they are at times. Having a restaurant will give us the chance to enjoy his food more often. I highly recommend anyone near Williamsburg, VA to look up Matchsticks BBQ Co. and give them a visit. Matt and company has done an excellent job and I believe they will continue to work hard to please everyone who pays them a visit. They want you to enjoy your visit. And just in case anyone wonders, I did not speak to Matt until we were finished eating. So our whole experience was without any influence from him to make it better. What we got is what you’ll get also.
