We found Scholl Bros Bar-B-Que when we decided to visit Paris, TX on our way to Oklahoma. We had decided not to head back south into lower Texas since we were starting to run short on time. Paris offered up a couple of fun sites to visit including the Eiffel Tower and the Sam Bell Maxey House. Both were nice places to explore. Also at the Eiffel Tower is a Veterans’ Memorial for all wars which Texans served in. Very nice tribute. So we found Scholl Bros Bar-B-Que and paid them a visit for dinner.

Where is Scholl Bros Bar-B-Que?

Scholl Bros Bar-B-Que is located on Lamar Ave. in Paris, TX. That’s US Business 82. They weren’t hard to find. This seems to be an older part of Paris but not as old as the Historic Downtown area.

The Restaurant and Staff:

The restaurant was a fun looking Rustic place. It was very clean inside and nicely decorated with a western theme. Yeah I know, go figure, Texas, Western Theme. What was I expecting? Well bottom line, it was very nice and I liked it. When you enter you’re at the counter where you place your order. After ordering you pay for your diner and take your food to a table. There were plenty of seats in the dining room. Everyone at Scholl Bros Bar-B-Que was very nice and treated us well.

Tonight I chose a 2 Meat Plate. I went with the Pulled Pork and Sausage with Pintos and Mac & Cheese for my sides. You can add pickles and peppers at the Pickle Bar. I’d have to say that the sausage was not my favorite. Don’t get me wrong, it was good but it just wasn’t what I’ve been looking for. I’ve tried sausage at several other stops on this trip and I think I’m just trying to find a homemade sausage that’s different from what I’ve been trying. I think I’ll just get off of the sausage hunt. But again, it was good. The pulled pork was really good. It had a very good smokering and smoke flavor. This pork was good with or without sauce.

My pintos were excellent. They seemed to have a slight chili powder taste mixed in with them. I really enjoyed them. The mac & cheese had a very good flavor as well. Tammy said it was spicy but I must have missed that. The pickles and hot pepper were a nice added touch, welcome to the South West.

Tammy went with a 2 Meat Plate as well. She chose Sliced Brisket and Smoked Ham with Potato Casserole and Baked Beans. The brisket was very good and had a really nice smoke flavor. I tried some sweet sauce with it but mostly ate it without sauce. The ham was great. Tender, moist and had a great flavor. I would never have thought of smoking a sugar cured type ham. Nice job guys!

The potato casserole was very good. I couldn’t pinpoint what all was in it but everything blended well. The baked beans were good too. They had a sweet bbq sauce base to them. We really enjoyed everything we had here.

Sauces:

I did try two sauces here. One was a tomato base, sweet type bbq sauce and the other was a hot bbq sauce. The sweet was like a KC type and was a good sauce. I liked the hot sauce the best. It had just enough kick but wasn’t too hot.

Desserts:

Tammy and I split a dessert. Scholl Bros Bar-B-Que calls it Pecan Cobbler, I’d call it pecan pie. Well it’s their restaurant so cobbler it is. And yes it was wonderful. They served it warm and we added some vanilla/chocolate swirl soft serve ice cream to top it off. It was fantastic.

Final Thoughts:

After dinner we talked to Kaleb. I believe he’s one of the owners/managers. He was a very nice young man and you could tell he loved his work. I introduced myself and told him about the blog. He was very grateful. I assured him that everything was good. As for final thoughts, I thought this place was a very good sample of Texas BBQ. I know we’re supposed to have beef in TX but this was some wonderful Texas style pork. I hope they do well in Paris.
