We’re going to pay a visit to Matchsticks BBQ Co. Someone had mentioned them to me in a message a couple of weeks ago. We checked them out and I saw that our niece had liked them so I contacted her to see why she didn’t let me know. I’m thinking they must not have been that great but all the reviews were good. Well my niece wasn’t sure if we’d want to check them out since they are operating a food truck. Well of course. We love some food trucks. So today we found them set up at an antique shop in Toano, VA. They were part of an outside event with music, food, vendors, etc. All that got our attention and away we went.

The Restaurant and Staff:

Like I said, Matchsticks BBQ Co. is operating a food truck so there is no restaurant. They are however in the looking stage for somewhere to set up shop and open a restaurant. The staff and the owners are the same. We talked with Matt and Nicole a little and loved them. What an awesome, hardworking, fun young couple. I think that pretty much covers the first meeting. They both just seemed so happy with what they were doing. They have been in business for a year now.

And respectful. I left out respectful. There was a hot dog vendor at the site set up next to them. Out of respect for them Matchsticks BBQ Co. did not serve their Smoked Sausages today. As much as I would like to have tried one, they offer mild and hot, I’m impressed with their decision not to serve them today. I’ll try them another day.

Matchsticks BBQ Co. Two Meat Platter with Sliced Brisket and Smoked Turkey Breast.

Today Tammy had a 2 Meat Platter with Sliced Brisket and Smoked Turkey Breast. She chose Mac & Cheese and Collards for her sides. Let’s start with the collards. They were great. The seasoning was perfect and they were cooked until nice and tender. These collards have an old fashioned flavor to them along with some vinegar and a little bite. I believe my dad would have loved these. Then there’s the mac & cheese. It’s made with shells and was wonderful. It had a great cheesy flavor and seasoned with just a little spice to make it different from what most others serve. I loved it.

The sliced brisket was beautiful. It had a nice crust on the outside, a perfect smoke ring and the flavor went right along with the looks. For Matt not to have a large number of years’ experience smoking meats, he nailed this. The smoked turkey breast was equally impressive. No I’m not switching to turkey but when it’s good you got to say it’s good. Well this was better than good so there you go. Just think if you’re a for real turkey fan like my wife, she loved it.

Two Meat Platter with Pulled Pork and Ribs.

I also went for a 2 Meat Platter. Mine had Pulled Pork and Ribs with Mac & Cheese and Baked Beans for sides. I already said how wonderful the mac & cheese is so let’s move on to the baked beans. Oh my goodness they were delicious as well. They were cooked in a thick molasses sauce with onions cooked in as well. I couldn’t get enough of them. I honestly believe next visit I will have to order an extra side so I can get both of mine plus the collards. It would be well worth it.

As for the pulled pork, well why would they go downhill now? The pork was great. It had a wonderful blend of smoke flavor and seasoning. And there was plenty of smoke ring and bark all mixed in together. I loved it. Finally, the ribs were some of the best I’ve had in a while. And that is no light or easy statement to make since I’ve had some fantastic ribs. These were awesome. They had a great smoke flavor, they were charred and they were tender. I could sit and eat a rack of these ribs right by themselves. Fortunately for me they were not serving the sausage or I may have missed out on these ribs. That would have been sad.

I believe I’ve been pretty clear about my feelings toward Matchsticks BBQ Co. Tammy and I have both fallen in love with them. This was just an incredible stop for us. The weather was perfect for being outside. Matt and Nicole were wonderful. I wish we could sit and talk more to get to know them better. They just seem like two hard working young people trying to find their place. I believe their place is in a restaurant. Matt did say they were looking. I wish them the best.

I recommend you going to their Facebook Page to learn a little more about them. Just a couple of things I picked up there are that Matt has only been smoking meats for about four years. Must be a fast learner. He and Nicole used to come to Williamsburg for Nicole’s birthday each year and fell in love with the area. That’s what brought them to this area. Lucky for us, not so much for Northern Virginia. Go to their site to read more.

    ♥️♥️ My favorite is the veggie burger, in a bowl, with smoked turkey with coleslaw on top. I also like baked beans ,in a bowl, with collards on top with brisket on top of that. A wonderful Sundae 😃😃😃

    OMGoodness! We are in love with Matchsticks! The smoked sausage and ribs are amazing! Not to mention their Vegan and Vegetarian options… the amazing Mac & Cheese, the scrumptious slaw, and occasionally they’ll have a special Vegan BBQ sandwich on their menu too! This is a wonderful couple and it is our pleasure to support them every chance we get!
